Options for zucchini

This is the time of year that most people are over-run with zucchini. Well, not us, not this year anyway. Our garden isn’t doing so well in this hot drought.

In the past, I’ve come home to piles of zucchini left on our doorstep, a few zucchini left on the front seat of an unlocked car, a handful of summer squash left on the counter in the break room.

I love zucchini on the grill, raw in a salad, shredded up in bread, but I run out of ideas pretty quickly. Here are some different recipes I found to use up your bounty of zucchini.

Braised zucchini with cherry tomatoes – this recipe looks like it might take a little longer to put together, but it definitely looks worth it! I don’t think you can beat the combination of zucchini and tomatoes.

Fried zucchini chips – like potato, but not. I think my husband would love to try these in our deep fryer…

Zucchini and tomato garlic “bread” – really, who needs the carbs? These look fantastic!

Roasted summer squash – I love this idea. Zucchini, squash, garlic, cheese… what more do you need on a summer evening? (Well, maybe a bottle of white wine…)

Zucchini tots – who knew zucchini could be substituted for potatoes in so many ways? Made in mini muffin tins to be perfectly bite-sized. These look great!

    If you were closer, I’d gladly offload some of our Zucchini. We have tons, and we never end up eating it all. We too end up running out of ideas. Though, I’ll definitely give these recipes a shot as they look really tasty.

    Last year we ended up shredding a lot of it, freezing some, and using it for Zucchini Bread to give away or used it in our spaghetti sauces. I think we made something like 23 loaves of bread last year. We still have some zucchini in the freezer too :(

      We still have some shredded zucchini in the freezer from last year, too. I never thought about putting it in spaghetti sauce… I love sneaky vegetables! I hope you like some of these recipes – let me know how they turn out!
