This is the time of year that most people are over-run with zucchini. Well, not us, not this year anyway. Our garden isn’t doing so well in this hot drought.
In the past, I’ve come home to piles of zucchini left on our doorstep, a few zucchini left on the front seat of an unlocked car, a handful of summer squash left on the counter in the break room.
I love zucchini on the grill, raw in a salad, shredded up in bread, but I run out of ideas pretty quickly. Here are some different recipes I found to use up your bounty of zucchini.
Braised zucchini with cherry tomatoes – this recipe looks like it might take a little longer to put together, but it definitely looks worth it! I don’t think you can beat the combination of zucchini and tomatoes.

Fried zucchini chips – like potato, but not. I think my husband would love to try these in our deep fryer…
